Meet the chefs of Sala Bua and Lo Spuntino

 
Umberto Barbieri is the award-winning executive chef of Lo Spuntino's Italian kitchen.Trained in a series of international hotels, he opened his own restaurant, Casa Carina, in the Piedmont region of Italy at the age of 23, where he won the prestigious Duja D’Or for 4 consecutive years. Umberto's areas of expertise include pasta making (all fresh pasta is made on the premises) and grilled meats. He places a high emphasis on quality ingredients, spending a lot of time sourcing treats for his customers such as fresh porcini for the risotto and wonderful antipasti.

Payom Lorvanich is the executive chef of Sala Bua's Thai kitchen. Born and raised in Bangkok, she learned to cook with her mother as a young child. Although she did not plan to cook professionally, she ended up as Head Chef of Assumption University, Rayong with 9 assistants, where she had the opportunity to develop her own twist to traditional Thai cuisine. Today, having her own restaurant has allowed her to express her passion for quality, creativity and style.

Chef Payom believes in keeping the genuine, original flavours of the food, and concentrates on using fresh herbs and ingredients to create the most authentic Thai dishes, whether pleasantly mild or intensely spicy.
